Feastie Friday: Mini Dessert Bites
If you have a sweet tooth, it can be difficult to practice the whole "everything in moderation" rule when faced with a giant slice of your favorite cake or pie (or favorite cookies, ice cream, brownies, etc.). Unfortunately, this means some people will skip dessert altogether! Quelle horreur! Sometimes adapting a dessert to make it healthier works, but show me healthy low-fat pie crust that actually tastes like the real thing and I'll give you a prize (and a hug) - sometimes you just can't replicate your favorite dessert in low-fat form. Instead of tempting yourself with a huge slice of cherry pie (or depriving yourself altogether), try the mini dessert bite. Mini pies, mini cupcakes, one-bite desserts - there are so many ways to adapt your favorite dessert into a miniature version of itself. Sure, you still have to show some self control because popping a handful of these little guys would be easy, but for some reason it's satisfying to have your very own little pie or cupcake, and if you use a tiny little plate, it feels like a real, plated dessert. Or maybe you don't give a fig about moderation but you want cute little bites for a party - mini dessert bites work perfectly here. Everything's cuter in mini form - even your favorite dessert. And there's no reason you can't enjoy your favorite sweets, just in smaller portions - these little dessert bites are a perfect way to satisfy your sweet tooth without going overboard (cheesecake overdose, anyone?). Piecrust!
I swear by coconut oil for piecrusts now. Do I get a prize? ;) At least it substitutes better fat for butter! Probably lower in fat overall than the traditional butter crust, but I haven't checked. I'll do that now; I'm curious!

More cookies or pie from yours truly! I need to try that - I've used coconut oil in a graham cracker crust, but not a traditional pie crust. Is it as flaky?
